An Amazigh ritual
Mint tea holds a central place in Amazigh cultures. It accompanies welcoming guests, conversations, and breaks throughout the day.
Prepared from green tea leaves and spearmint, it is traditionally served in three stages . Each glass bears a transmitted reading:
→ the first, more bitter, opens the time for exchange; bitter as death.
→ the second, gentler one, sets up the discussion; gentle like life.
→ the third, lighter one, accompanies the end of the shared moment; light like love.
In some regions, a small amount of pennyroyal mint is added. More pronounced, it structures the flavor and provides a characteristic aromatic depth.
